Bluberry cheese Tart

This blueberry cheese tart is very very rich in cheese. It is best serve when it is warm and it is a very comfy food.

Ingredient A: ( Pastry )

1. 250 grams of superfine flour
2. 150 grams of butter ( cold )
4. 60 grams Caster Sugar
4. 2 Tablespoon Ice cold water


Ingredient B: ( Filling )

1. 260 grams of cream cheese
2. 30 grams of butter ( unsalted )
3. 70 grams of Icing Sugar
4. 1 Grade B Eggs
5. Juice of half a lemon and zest.
6. Wild blueberry Topping / filling.

Method:

Pastry:

1. Mix all of the ingredient A. mix well till it is golden in color and very soft and fragile.
2. Form a ball shape the roll out the dough on a cling wrap cover it with another cling wrap than keep it refrigerated for 45 minutes.
3. Roll out the dough and cut it according to the tart mould.
3. Bake till it is half cook for about 12 minutes at 180 degree C.


Filling:
1. Mix the cream cheese in the mixer till it is soft and smooth.
2. Add in the Egg, Icing Sugar, butter and lemon/ lime juice. Mix it Very well
3. Place it into the half cooked pastry and take about 3/4 teaspoon of blueberry topping/ filling and spread it with chopstick/ wooden stick.
4. Bake it for another 8 minutes at 180 degree C.
5. After bake leave in the oven for 20 minutes. Serve.

Royal Icing for the Cookie

This Royal Icing is the best for the Happy people cookie. This Royal Icing needs to be used immediately, or in an airtight container. This Royal Icing can Make up to 3 Cups.

Ingredient:

4 Cups of confectioner's sugar
3 Tablespoon of Meringue Powder
1/2 to 1 cups of warm water
3/4 teaspoon of vanilla essence
Assorted colored gel paste.

Method:

1. In a mixing bowl, mix in the confectioners sugar and Meringue powder. Then slowly add in the water and vanilla essence. Beat at a high speed until it is glossy. Usually it is about 5 to 7 minutes.

2. Divide it in to a several portions and add in the color gel paste.

Happy People Cookies

This cookie is very delicious. This is best serve during a birthday, Thanks Giving and other occasions.

This recipe can make up to 30-35 cookies.

Ingredient:

1 1/2 cups of butter
1 1/2 cups of caster sugar
4 grade B Egg
1 1/4 teaspoons of vanilla essence
5 cups of all purpose flour
1 3/4 teaspoons of baking powder
1 teaspoon salt

Method:

1. In a mixing bowl, mix butter, sugar and eggs, Vanilla essence. Beat it at a medium speed till its fluffy and smooth. Then In a large bowl combine flour, baking powder, salt into the other mixture. Mix it very well. Cover the dough and chill it for 2 hours.

2. Preheat oven to 400 degree F. On a floured surface, Roll out the dough into 1/2 inch thick. Cut it into a human shape. Place the cookie on the baking tray while grease it with butter or baking sheet. Bake it for 8 minutes. Let it cool. Then remove it from the tray and place it on the wire rack. And decorate it with royal icing.

Cake Cream Topping

Ingredient

1. 2 Cups of heavy whipping cream (In Box Type)
2. 1 Cups of Castor Sugar
3. 1 Teaspoons of Lemon Extract
4. 1 Teaspoons of Vanilla Essence

Method
- Pour heavy whipping cream into a large mixing bowl
- Beat until soft peaks form; add the sugar, vanilla and lemon extracts / Lemon Juice and beat until stiff peaks form.
- P/S: Do not overbeat because it will form a butter.

Bluberry cheese cake

Ingredient A

1. 150 gram of Marie biscuits
2. 50 gram of butter

Ingredient B

1. 250 gram of cream cheese
2. 140 gram of blueberry yogurt
3. 60 gram of castor sugar
4. 4 eggs
5. 1/2 lemon juice

Decorations

1. Blueberry jam
2. 40 gram of blueberry
3. Topping cream

Method

1. Grind Marie biscuit with butter till fine. Mix Well
2. Pour in the mixture into a Casserole. Grease the casserole with cooking oil or butter. Put aside
3. In another bowl mix the cream cheese with Castor sugar by using a hand mixer. while mixing add in yogurt, eggs and lemon juice.
4. Pour the mixture with the grind Marie biscuit. Bake t 165 degree C for 40 min.
5. Leave the cake outside of the oven and when cold keep it Refrigerated.
7. Spread the cake with Topping Cream and spread the blueberry jam ontop and sprinkle some blueberry ontop.

Vanilla Sauce

Vanilla Sauce is best serve with the bread pudding.


Ingredient
1. 1 Tablespoons of butter
2. 1 Tablespoons of flour
3. 2 Tablespoons of sugar
4. Pinch of salt
5. Dash of Nutmeg powder
6. 1/2 Cups of milk
7. 1 Teaspoons of Vanilla essence

Method
- In a saucepan, melt butter on lowest heat on stove. Add flour bit by bit till dissolve. Remove from heat.
- Stir in milk and mix well before returning to heat
- Add in sugar, salt, nutmeg powder and vanilla essence. Stir till smooth and thick
- P/S: It will get thicker when it is cold so you can add some hot water.

Bread Pudding Recipe

Ingredient

1. 1/2 butter
2. 10 pieces of bread
3. 4 cups of Fresh Milk
4. 3/4 Cups of Sugar
5. 2 teaspoons of Vanilla Essence
6. 6 eggs
7. 2/8 of salt


Method

£ Pre-heat oven at 180 degree C
£ Melt butter in a saucepan on stove at lowest heat. Spread half of the butter at bottom and sides of baking casserole
£ Tear / Cut bread into casserole and arrange. Pour on top of the bread. Put aside.
£ In a large bowl beat the eggs first before adding the scalded milk. Add sugar, salt and vanilla essence.
£ Pour the egg mixture over the bread.
£ Spread some raisins, nutmeg powder and chocolate chips ontop of the bread before putting it in the oven.
£ Bake for 45 minutes. Best Serve when it is hot.
