Pumpkin with Dried Cranberries Loaf.

Hello and welcome to my blog. Today is another wonderful day isn't it?, Well if you ask me it is because I would like to share with you another yet gorgeous and delicious recipe. Today this recipe which I would like to share with you is actually quiet easy and the outcome is of course delish.. Like always I am going to show you the pictures of the finished product. This Loaf which I am going to show you is Pumpkin with Dried Cranberries but of course you can use fresh or frozen cranberry but as always fresh is the best..

Ingredients.
1. 1 1/2 cups of Pumpkin puree ( make sure that there is no spices added )
2. 11/2 teaspoon of baking powder
3. 1/2 teaspoons of baking soda
4. 1 teaspoons of cinnamon
5. 1/2 teaspoon ginger
6. 1/2 teaspoon nutmeg
7. 1/2 teaspoon cloves
8. 2 1/4 cups all-purpose flour
9. Pinch salt
10. 1 teaspoon vanilla extract
11. 1 1/2 cups of cranberries ( chopped )
12. 1/2 cups of fresh milk
13. 125 gm of butter
14. 3/4 cups of brown sugar
15. 2 eggs
Method.
# Sift all the flour, spices, baking agents and salt. Place in a bowl
# Cream butter, sugar till light and fluffy. Then add in eggs one at a time. Then stir in the pumpkin puree and vanilla extract. Stir in the milk. add the dried Ingredient until incorporated. Fold in the cranberries ( Tips: You can add in some walnut to add some crunch in your loaf )
# Place the thick batter into The prepared loaf tin and bake for 1 hour to 1 hour and 15 minutes or till skewers comes out clean at 375 degree F.
# Allow loaf to cool before slicing the loaf
